La Linda · Dulce

La Linda Dulce is a golden yellowish sparkling wine with expressive and pleasant aromas reminiscent of tropical fruits and flowers. It is straight-forward and gentle in the mouth, with persistent bubbles. A voluptuous and refreshing wine, gentle in the mouth, with the perfect balance between sweetness and acidity. Lively, with citric aftertastes and a fruity finish that is as intense as attractive.

Winemaking

At the appropriate moment of ripeness, the Viognier grapes are manually harvested in 18-kilogram boxes. At the wine cellar, the properly-filtered grape juice is immediately placed in a watertight tank after the grinding process, where it is fermented and goes through the “prise de mousse” process until fermentation is stopped through the system’s cooling. By stopping fermentation, the grape juice’s sugar is kept in this wine, what provides the characteristic sweet flavor, perfectly balanced with acidity. If fermentation takes place in a watertight tank, the precise amount of carbon gas will be provided.

Comments by the winemaker

La Linda wines are made seeking accuracy and clarity in the fruity expression of each variety, what is achieved through an early harvest and a well-cared-for winemaking process that strengthen the wine’s fresh aromas and juicy character.
